These crispy roasted fingerling potatoes are full of flavor with an extra crispy crunch to them. I love potatoes no matter how they are cooked, but the crispy texture and wonderful flavor of these potatoes is indescribably delicious. No matter how many I eat, I seem to always have room for one more. That’s why I try not to make to many of them.
This is an excellent recipe for one or two people since you need only make what you can eat for one meal.
