Sometimes our local store has a special on bananas. I used to be leery of buying too many because we couldn’t eat them fast enough. Now that I’ve learned how to dry bananas in a microwave, I never hesitate to pick up bananas when they are on special. Dried bananas are useful as snacks and for decorating desserts and cakes. This version is simple and does not use any preservatives which can sometimes cause allergic reactions.

- Peel the bananas
- Arrange on microwave plate in single layer
- Microwave the bananas in the defrost mode from 10-15 minutes. The time will depend on the thickness of the slices. It’s very important to use only the defrost mode!
- Remove banana slices to a wire rack for cooling.
- Leave on rack until thoroughly cooled and dry, anywhere from 8-12 hours.
