I like all root vegetables and beets are one of my favorites. The color of beets really perks up a plate and the flavor is so sweet it’s amazing. Roasted beets are the sweetest of all and really don’t need any additions other than a little butter. Sometimes though, I like to add a little extra flavoring to my beets and that’s when I pull out all the stops and make Harvard Beets.
