  • I’ve had this Unbelievably Moist Blueberry Buttermilk Coffee Cake in my recipe file for several years now. Coffee cakes are so easy to make and add so much to a special breakfast or brunch. It’s also a great snack for brown bagging with your morning coffee at work. 

    We live in blueberry country and as soon as the wild blueberries come into season, I’m digging out this terrific recipe. This can be made with regular blueberries, but we love baking with the wild ones because the distribute so easily in the batter because of their size.

    1. I’d love to try this recipe, but am a bit confused about the amount of buttermilk to use in the recipe. What does “½ cup buttermilk*** ⅞ cup = ¾ cup + 2 tablespoons” mean?… Am I supposed to use 1/2 cup, or 7/8 cup?

        Sorry for the confusion, Joy. This measurement was meant to use when making buttermilk, but was not clear. I’ve re-written the directions for making buttermilk. Thanks for pointing this out.
