One of the things we really dislike when making a large holiday meal is the final rush when trying to get everything accomplished and all the food on the table at the same time. One of these last minute chores is mashing the potatoes.
A few years ago I came across this technique of how to make mashed potatoes days ahead of time. It has since be a lifesaver on many occasions. Now I rarely make mashed potatoes at the last minute because this technique is so easy and really cuts down on the last minute rush.
The prepared mashed potatoes may be made up to a week ahead of time. If preparing ahead, place in an ovenproof baking dish, allow to cool slightly, cover, and refrigerate.
